The Cheese Making Workshop specialise in teaching the art of home cheese making, sharing their passion and knowledge in various hands, on cheese making workshops. They aim to take the mystery out of making cheese, using simple ingredients and familiar equipment to allow even the most inexperienced cook to make their own delicious cheese at home.

The workshops are fun, easy and informative and run regularly from their purpose built premises located at the Big Banana.

There are regular cheese making classes with a variety of cheeses. Choose from the daily 1 hr workshops or make a day of it and do one of the full day workshops.

Daily 1hr Workshops: Mon – Fri

Ricotta & Ricotta Salata – 1 Hr

Ricotta and Ricotta Salata would have to be the easiest cheese to make! You don’t need any special equipment, the method and technique for these cheeses are as simple as the ingredients themselves.

In our 1 hour workshop we will show you how to make ricotta and introduce its many applications.

Ricotta salata, which we like to call poor mans parmesan, is just as simple to make, with the added advantage of this cheese is that is can be stored for up to 7 weeks and can be used to grate over your pasta dish.

Another great thing about these 2 simple cheese is that you can use any animal milk to make them, cow, goat, sheep, buffalo. It can be fresh or UHT, it is also a good way to use up milk that is coming to its use by date.

Home cheese making is a very simple process. Cheese is the oldest form of processed food and it actually  it predates bread making!

Out of the range of cheeses we teach, ricotta and ricotta salata are 2 of the best cheeses as an introduction into home cheese making. Each of our workshops are designed to take the mystery out of cheese making, breaking it down into something that is so simple you will be able to reproduce in your own kitchen. This is a 100% hands on workshop where you will make the cheese.

Yogurt & Fresh Cheeses – 1 Hr

Learn how to make your own fresh yoghurt, labne, quark and mascarpone in this simple and fun 1 hour cheesemaking workshop.

Our 1HR Yoghurt and Fresh cheeses workshop show cases this style of cheese which is so simple to make, you don’t need any special equipment and the method and technique for these cheeses are as simple as the ingredients themselves. In our 1 hour workshop we will show you how to make yoghurt which will then make labne  ( yoghurt cheese ) quark which is cream cheese and mascarpone.

It is so cost effective to make these cheese one kg of a good quality of style Greek style yoghurt costs approx $1.50 per kg,  quark (cream cheese ) for approx 250 g is $1.20 and Mascarpone is approx $3.00 for 500 grams this is a huge saving.

Home cheese making is a very simple process, cheese is the oldest form of processed food it pre dates bread making, so it can not be to difficult. Our workshops are designed to take the mystery out of cheese making, break it down into something that is so simple you will be able to reproduce in your own kitchen. This in this workshop you will be introduced into the world of home make the cheese. Soft Cheese Making

In this 100% hands on, fun workshop, you will learn how to make you own, gourmet soft cheeses.

Cheeses taught on the day include:

  • Camembert
  • Fetta
  • Ricotta
  • Mascarpone
  • Quark
  • Greek Style Yoghurt

Cheese tastings, morning tea and a cheese inspired lunch are all provided as part of the workshop. All equipment, cultures and cheesemaking kits are available for purchase from our retail store on the competition of the workshop. All workshop notes are provided.

By the end of the day you will be surprised at how easy home cheesemaking really is, when you think about it milk maids have been making cheese in mountain plateaus for centuries, it surely can’t be that difficult in a modern kitchen. It really is ‘Home Cheesemaking, Made Easy!’

This is a hands on workshop and class numbers are restricted to ensure hands on experience. The Soft Cheese Making Workshop is taught by home cheese makers, for home cheese makers. We use simple equipment for our cheesemaking and the process has been modified for a home kitchen environment.  After the one day workshop we guarantee you will be able to make your own gourmet cheeses at home!

The workshop starts at 10am and finishes at 4pm, bring nothing but your self and a love of cheese!

Morning tea and a cheese inspired lunch are all included, please let us know at time of booking if you have any dietary requirements so we can adjust the menu accordingly.

In this 4 hour 100% hands on, fun workshop, you will learn how to create delicious cheeses that are used in households every day.

You will make:

  • Fetta
  • Ricotta
  • Haloumi
  • Greek Style Yoghurt

The workshop starts at 10am and finishes at approximately 2:30pm. Everything you need for the day is provided, this includes all workshop notes, cheese tastings, morning tea and a delicious cheese inspired lunch. Once inspired, we have all equipment and cultures are available for purchase on the day for those eager to get started.

Bring nothing but yourself and a love of cheese. Please let us know if you have any dietary requirements so we can adjust the menu accordingly.

Pasta & Gnocchi Workshop

Our Pasta and Gnocchi Workshop is loads of fun! It’s practical, easy to follow and 100% hands on.

In this workshop your will learn how easy it is to make your own pasta dough, on request we will work with gluten free flour to make the pasta. Our pasta dough we will then turn into Tortellini, Agnolotti, Spaghetti and Fettuccini. The Tortellini and Agnolotti will be stuffed with a fresh home made pesto, some home made ricotta and spinach or perhaps a mushroom rague. We will also create a rich tomato sauce and a chilli and mascarpone sauce all home made of course, to have with our home made pasta.

Then we will turn the humble potato into a light little pillow of gnocchi and match it with a delicate sauce. The word gnocchi in Italian means ‘little lump’. It was originally served as an extra during a traditional Italian meal.  Gastronomically speaking however, gnocchi should be anything but lumpish as a well made gnocchi should be light and fluffy.

When all our food is made we will plate it up and have a delicious Italian inspired meal. The workshop including meal runs for 3 hours.

Advanced Cheese Making Workshop

After mastering your soft cheeses, the Advanced Cheese Making Workshop will take your love of cheese one step further! Learn how to make:

  • Farm House Cheddar
  • 2 different types of Blue Vein
  • Havarti
  • Haloumi
  • Mozzarella

Add these delicious cheeses to your collection using all the same equipment used to make your soft cheeses.

Farm House Cheddar is a beautiful, rich cheddar that can be enjoyed by the younger and more mature palette. It melts well and is a delicious served with a cold beer or glass of red.

We cover 2 different blues, the first is our Bucca Blue which is a creamy lush blue with an earthy flavour. The second blue vein we make on the day is our Solitary Island Blue, this is a stilton style cheese that has just the right amount of salt and bite.

Havarti hails Denmark and is famous for it’s deliciously mild, subtle flavour and buttery aroma, this is a great table cheese that you will quite often see infused with different flavours. We often make this in little rounds and wax them in red wax which the kids love.

Originally from Cyprus, Haloumi is the perfect cheese for the BBQ and is commonly served with watermelon. Or try dusting in corn flour and pan fried for a crisp texture. Making your own Haloumi is simple and you can adjust the salt to taste.

And who doesn’t love fresh Mozzarella?! This is a fun cheese to make and get your hands into, stretching the curd is like adult play dough! The flavour and freshness of your own home made mozzarella will delight you.

The workshop starts at 10am and finishes at 4pm. Cheese tastings, morning tea and a delicious cheese inspired lunch are all included in the workshop.

Bakery Workshop

Knead we say more! Being passionate about all things food, baking is a part of life. The art of baking dates back centuries and what an essential part of life it is, from our loaf of daily bread, yeast buns, biscuits or cakes. In our bakery workshop we cover basic and specialty breads, pull a part bread, pizza dough, croissants, Danish and much more!

You don’t need to be a great cook or have a lot of experience in the kitchen to participate in our workshops. What we do is build confidence in the kitchen show how you can make your own food from scratch using basic kitchen appliances. All our workshops are 100% hands on so you will get a feel of how the dough should feel, when it has been kneaded enough. We also have a small stone mill to grind our own flour for those wanting to get right back to the beginning. If you are wanting to make a tasty cheese bread we have plenty of home made cheese to add to the mix, through in a little spinach to make a great pull a part.

The workshop runs from 10am to approx 4pm and includes all workshop notes, morning tea a workshop inspired lunch You will need to make sure you have a hungry hoard at home as you will take home a lot of freshly baked goodies.
